Let’s unravel the complexities of a meal that may seem intimidating at first glance.

Our meal consists of three main components: an 18-ounce pork chop with apple glaze and potatoes, green beans, and cheese-covered grits. Let's analyze each part to understand its impact on your blood sugar levels.

As you likely know, carbohydrates play a significant role in blood sugar management due to their impact on blood glucose levels.. Let's break down the carbs in each component of the meal:

 

Pork Chop. The pork chop itself contains minimal carbs. The small portion of potatoes and the sweet glaze combined may contribute around 10 grams of carbs if you were to consume the entire pork chop.

Green Beans. The green beans are primarily a fiber source and won't significantly impact your blood sugar levels. Therefore, we won't count them in the carbohydrate equation.

Cheese-Covered Grits. The grits are the main carbohydrate source in this meal. They are relatively dense and could be considered similar to rice in terms of carb content. For a cup-sized portion, we estimate around 35-45 grams of carbs. Let's go with an estimate of 40 grams.

 

Adding up the carb counts from each component, we have approximately 55 grams of carbs for the entire meal. However, it's crucial to consider the impact of protein and fat on blood sugar control.

Protein and fat from the pork chop play a significant role. The nuts on top of the pork chop contribute a small amount of fat as well. Meanwhile, the cheese-covered grits are the "X Factor" in this meal. So, what's going to happen? You're going to watch your blood sugar to start going up and  going down and then it is going to rise hours later. You have to be ready for dose number two with this meal, I can assure you if you do not, you will wake up feeling like someone hit you with a two by four.

After enjoying this meal, it's important to closely monitor your blood sugar levels. Due to the presence of protein and fat, you may experience a rise in blood sugar levels several hours later. Be prepared to address this with an additional dose to maintain stable blood sugar levels throughout the night.
